			<content:encoded><![CDATA[<p><em>O singura conditie ca sa ne apucam de treaba: sa fie fun. Altfel se arde, se prinde, se acreste sau nu se leaga. Fumam si bem vin in timp ce gatim, nu am inteles niciodata de ce bucatarii se imbraca in alb si nu in rosu sau in galben. Ah, si ne place sa gatim cu alcool: bere la oaie, vin la vita, whisky la pui, amaretto la dovleac, rom la ficatei, triplu sec la flambat. Daca nu ne explica nimeni cum sa ne facem treaba, legam si 36 de ore. Cu mainile in sold, fara bipuri, la cazan pentru ca e un lucru stiut, de acum, ca mahalaua creste apetitul.</em></p>
<p><em></em><br />
Eu sunt banatean, cu radacini unguresti, imperial-ardelene, dar si o picatura de Rusie si Turcie. Francofon prin formatie, thai prin gusturile picante. Madalin e un bucurestean get-beget, care a trecut prin cateva restaurante din Toscana. Obsedat de conopida si foarte scrupulos cand vine vorba de amestecat ceapa cu usturoiul. De cele mai multe ori incep eu mancarea, uit de ea, Madalin ma cearta si o termina. De celelalte ori, invers.</p>
<p>Facem mancare pentru prieteni, nu pentru clienti. Ne e mult mai usor sa o gatim decat sa-i lipim etichete: bio, french, fusion, ungureste, traditional, indian etc. E un mix digest, sper eu, cu de toate, dupa chef, inspiratie si ce gasim prin frigider. Nu dupa reteta. La foc, nu la gramaj. Daca ni se pare ca pastele de orez merg cu spanac si lapte de cocos, asa le facem. Cateva reguli insa: fara faina si prajeala, fara ulei de floarea soarelui, fara amidon, fara Knorr si alte experimente chimice. In schimb: marar, patrunjel, usturoi, tarhon, menta, cimbru, busuioc, ardei iute – VERDE. In general, Verde. Plus ghimbir, scortisoara, chimen, cardamon si multlime.</p>

			<content:encoded><![CDATA[<p>OK, ce blog de bucatari e asta, daca nu are retete? De ce nu dam din casa? De ce nu descopunem mancarea in cantitati, grade si timpi de preparare? Pai… stai sa vezi, nu gatim dupa retete. Decat daca ne-o cere <a href="http://www.daiazic.ro/">cineva</a>.</p>
<p>De multe ori se intampla sa ne apucam de gatit avand doar o idee aproximativa despre cum ce vrem sa punem la final in farfurie. Sau nici macar. Uneori, alegem ceva la inspiratie din piata sau, oroare, hypermarket, si vedem cu ce s-ar putea combina. Cand gatesc la patru maini cu Madalin, mi se intampla sa las ceva pe foc, sa ma apuc de altceva si sa gasesc mancarea terminata. Altfel decat ma asteptam, dar in 80% din cazuri, pe gustul meu. Iar daca uneori pornim de la o reteta consacrata, nu ne putem abtine si o ducem in alta directive. Pe scurt, Circulinar inseamna, printre altele, improvizatie, freestyle.</p>
<p>Dar gata cu povestile, hai sa discutam aplicat. Prin vara am descoperit, ca bucatar zic, crevetii, unul din putinele produse plimbate cu avionul pe care le ingadui in bucatarie. Iubesc crevetii pentru ca sunt usor de gatit si au un gust foarte puternic care poate compensa o cantitate mica – costa totusi 50 de lei kilogramul! M-am intors de la Real cu 250 de grame de creveti si un plan lipsa. In drum spre casa, m-am oprit in Obor, ultima piata adevarata din Bukaresh, pentru cartofi noi, smantana de taran si leurda. Cumparate toate la inspiratie, cum ziceam si mai sus.</p>

<p><strong><em>In bucatarie, la fel ca in literatura, nu exista retete sigure, exista insa reguli de bun-simt.</em></strong></p>
<p>Puristii au teorii foarte clare despre creveti, teorii pe care le ignor cu bunastiinta si bunadispozitie. Nu le rup capul, nu ii decortichez, ii gatesc intregi, evident, dupa ce i-am spalat bine. Am inceput in dulcele stil clasic: creveti trasi in unt cu usturoi, la wok. Dupa 2 minute si o gura de vin, obligatoriu rose, am hotarat sa pun niste smantana. Grasa, dulce, din sticla de Cola. Ce se putea intampla? Dupa cinci minute aveam un sos dens din care se iteau crevetii. Cam prea dens pentru ce m-am asteptat si, parca, putin cam greu. No prob. Oricand, orice se poate compensa din garnitura.</p>

<p>Cartofii noi, asta stie toata lumea, se taie felii de grosimea unui deget de balerina si se prajesc in ulei incins. Recomand uleiul de palmier, ieftin, prietenos si sanatos. Uneori, cand nu mai sunt chiar noi, ii tavalesc printr-un amestec de sare, piper si gris ca sa iasa extracrispy. Scursi bine de ulei se potriveau la marele fix cu crevetii mei in smantana. Dar eru tot din „zona dulce” de gusturi. Aici a intervenit leurda, care putea la fel de bine sa fie rucola, intre noi fie vorba. Stropita cu lime si ulei de masline &amp; samburi de struguri s-a transformat instant in salata. Putin iute, putin acra, la marele fix.</p>

<p>Iata o non-reteta. Un pranz simplu, light, preparat in 20 de minute, gatit cu ce s-a nimerit sa iau din piata. Am incalcat cateva reguli culinare? Probabil. Am gresit consistenta? Probabil. A fost bun? La pariu! Pentru ca nu retetele conteaza, ci regulile de baza. Din episodul de azi voi izola trei:<br />
1.	Foloseste scule de calitate si ingrediente de calitate. Tigaia nu e wok si uleiul de floarea soarelui nu e ulei de masline. Punct!<br />
2.	Adapteaza-te din mers. Daca s-a taiat sosul sau e prea gros, asta e! Gandeste-te cu ce s-ar potrivi asa cum a iesit.<br />
3.	Nu abuza de condimente si gusturi. Pastreaza un fir narativ. Daca incarci salata cu prea multe arome, de exemplu, risti sa eclipsezi felul principal.</p>
